i have a logitech attack three, but it seems a bit jerky when i'm using it (as in i will slowly pull back on it to pitch up and it does nothing and then jumps ten degrees and so on) is this a problem with the stick or game?

I used to have the same joystick, (attack3). Decent stick for the money you pay for it, and had the esame problem. instant the stick grabs from the deadzone, zzippp, up you go a few degrees more then you wanted to.
I shelved it for a 3d Pro (thnk thats the name, has a thumb button and hat switch), and performs much better. Original i got a Evo Cyborg, but found it too clumbsy in grip. Felt unnatural to me, and returned it for said 3d pro by logitek. Has a nice feel to it, molds to your hand, and doesnt suffer from the same jerkiness as the attack 3, its smooth tracking.
If i had my way, id have an old thrustmaster joystick that mimics the F16 stick. I "grew up" in sims with one of those and that layout remains my favorite, but can never find it in stores anymore.

A lot of sticks have a "dead zone", either in the physical design or in the software. They don't register any motion until the stick leaves the dead zone. Try looking on the internet for suggestions for reducing it.
You might also want to retry the "calibration" in the windows control panel (under joysticks or gaming devices, depending on version), since SWG uses the windows joystick calibration. Make sure that it really is dead center when it says to have it centered. Also - while you're in there, you can verify whether the sudden jump from no movement to too much movement happens. It gives you a test display of where it thinks the stick is.
