Cliff notes version.

In the case of an Xwing, one weapon produeces 2 bolts (or beams). So, two weapons produces 4 bolts.


The exact layout of the bolts is sort of like:

weapon 1a---- weapon 2a
weapon 2b---- weapon 1b


If bolt 1a hits, you do full damage for that gun.
If bolt 1b hits, you do full damage for that gun.

if bolts 1a and 2b hit, you do full damage for both guns.
