It seems like there are a lot of differing opinions out there.
Anyone know for sure whether it counts as a full hit of all six of bolts if it looks graphically as if only one wing bolt catches my target?

The number of bolts that hit doesn't matter. The bolts are just a visual representation of the weapons firing. It would appear that a hit calculation of the weapons is based upon a successful meeting of the target hit box with one of the coverage zones from the weapon (ie. Y-wing has a tight spread, X-Wing has a wider spread). A weapon is considered to be one entity when it is installed (ie. it is one component when it is installed on our ship but it may occupy more then one visual spot). The damage rating is for the weapon, not by the bolt (ie. 2600-3600 damage is not represented as 1300-2300 per bolt, it is tallied as one weapon despite two visual mounts).

Yes it does make a difference, if your craft has multipleweapon mounts. It will do more damage if all of them hit the target. It is usually extremely hard to do that though(especially with a-wings) if you are using privateer craft. Just put your best weapon in the slot that hits the targets the most. The others will come in handy on the larger gunboats, etc...

It doesn't matter for the individual weapon (ie. an X-Wing visually fires two bolts from the same weapon, one off of each wing). For multiple weapons it's a matter of connecting with each weapon individually irregardless of how may bolts are fire en mass. Therefore, taking an X-Wing as an example with 3 weapons mounted, if you scorea hit with the hit zones off of the left wing on the target hit box then it registers as a full-hit from all three weapons even though all bolts on the right wing have completely missed. Strangely though there have been times where all of my shots have visually missed the target but I still registered a hit.

It's both, actually.
Each 2 graphic representation of the bolts counts as one projectile.
Say you have a ship such as the TIE Fighter. Has one spot for a projectile. Graphically if one of the 2 graphics hits, then you hit for the full damage. If you have the TIE Interceptor, it represents 4 bolts for 1 projectile.
However if you have a ship with more then one projectile spot, each one is counted in the same fashion.
Say you have aScyk with 1 slot. The weapon does 600-900 damage (hypothetically) reguardless if both graphics "hit" the target
Say you have a Dunelizard with 2 slots. You have 2 weapons that do 600-900. If the graphics show that 1 hit, you will do 600-900 damage. If both graphics hit, you will do 600-900 + 600-900
With some of the ships that have wingtip mounts...it will be near impossible to hit with all the weapons at once, unless you are at the right distance, such as the case with the Kimogila.
