Make sure you stick close to your escort at all times, if you get a message saying you are too far, ignore the fighter you were chasing and head back close to your escort.

When there are no fighers about target your escort and type /follow, this will ensure that you stay with your target and match it's speed.

If you find yourself overwhelmed by fighters then disable them and leave them to float dead in space rather that destroy them, it's quicker to disable a fighter than destroy it and if you leave it floating about it will auto-destruct after a while anyway.

To disable a fighter, target it and press the [ or ] key to cycle through its components until you see "engine", shoot at the fighter until the engine goes down to 0% then leave it and head for the next fighter.

Bring a book (I recomend something long enough to last through the whole escort mission, say, War and Peace?), set autopilot, read for good long time.

Isamu has given some good tips, and here's a few more:

The tactics are a bit different depending on what exactly you are having problems with...it the survival of the ship you are escorting, or your own survival you are having trouble with?

Survival of the ship you are escorting: The best tactic for this, is to try to make sure you hit as many (preferrably all) of the attacking ships that you can before they start firing on your escort...that way, they are all, or mostly all, trying to kill you, which leaves your escort in the clear. This is especially important on those escort missions where the waves of attackers spawn rather quickly.

Your own survival: If you are not running droid commands...start using them right now. There is a great link to these commands, and what they do in the Pilot FAQ 3.0 at the top of the page. There is also a very large amount of other fantastic information in there, so if you have not read it yet, give it a shot. As to flying in general when the odds are stacked against you, when you fly into/towards the enemy formation, hit your target nearest enemy buttonafter you pass them...that way, you are going after the one in the back of the pack, and it will take some time for the rest to reform behind you...if you cannot do this, make sure you are following the largest concentration of enemies, which leaves fewer at your back. If you start getting shot up really bad, go evasive until you can Shield Shunt and recover from it. I do not know what tier pilot you are, but if you are 2/2/2/2 or less, go to either Penumbra Omen in the Naboo System, or (I think it's Hutt claims) in the Tatooine System, and practice dogfighting with many enemies...your skills will improve.

Disabling your enemies when the fight is fast and furious will often tip the scales in your favor, as Isamu stated.

When the ship you are escorting first arrives, take note on your rader what it's *blip* looks like...use that to keep track of where it is in reference to you. If that blip starts to get really small, you are too far away. Peel off and head back towards it as fast as you can, and then engage your enemy.

If you need more help, say the word, and try to be specific as to what aspects you are having trouble with.

Enjoy

If you can manage it, in a wave, blast all but one and cripple that last. I don't mean disable, I mean take the engine down to 5% and let it try to catch up. If you're escorting something without turrets, you can just damage the engines as much as you feel sure of and let the escorted ship do the rest (follow the escorted ship closely for a while to get it to take a bit of fire meant for you, then it will fire back).

Of course, if you need the XP and don't need a break, blast everything. If you need XP but are getting a bit overwhelmed, disable one and get a minute or two to recover.
