Thinking about Grinding out the Rebel Pilot profession and equipping the helm and then retiring (It's for a warddrobe look I'm going for).
If I were to grind out the profession, equip the helmet, and then retire... would the helmet be automatically de-equipped from my character?

Nope, as long as you never take it off you can continue to wear prior faction rewards.
When I dropped Imperial to do the rebel squads I wore my Imperial flight jacket for a long time, until I needed to swap it for some armor.
