Um, if they fly at 700, how are you ever going to keep up once the fighters attack? by the time you kill off the wave, even a really fast killing of the ships, you will not be able to catch the escort. After a couple waves, the escort will be long out of range.

Uhh, you never actually have to fly to become Master Pilot. You can sit in a gunner seat and feed the pilot waypoints for your missions and they will succeed just fine. Cheesy, I agree, but doable.
Until you have a mission where docking is required, true enough.

Lol.. That has got to be the cheapest way of doing it. But whatever.. If you have a friend who is really willing to do the entire Pilot profession again and get no credit for it, go for it.
Don't agree with your ideas about training and granting skills, but it would be nice to be able to get Duties without touching down, and EVERYONE hates escort missions.
My idea for better escorts would be like this:
The ship you meet/capture/steal moves at a good pace (varies based on your tier). When an attacker wave appears, the escortee "panics" i.e. goes into a looping evasive pattern centered on the spot where it was when the attack came. As soon as you finish the wave, the ship returns to course and proceeds.
Benefits:
No more disabling the foes and then just following your target for teh win. You gotta do the waves to finish the mission.
The quicker you eliminate them, the quicker the mission gets done, a very definite payoff.
If *I* have a friend?!?!? Uh, no need, Mastered pilot enough times now without the aid of this sort of thing.
