I was putting guns on my ship and it went over my reactor limit... i went up in space to see if components still ran.. and they did.. but what i noticed was that on one of the guns.. to the left of it on the "V" menu.. it showed a triangle... and said "efficiency 1.0" or something under the stats of the gun..... im wondering what exactly happens if you fly around normally with your reactor overloaded like that?

A ship will run normally with a slight Reactor Overload without any decline in performance. Get too far over the Reactor Output, though, and components will start to lose efficiency and fail (from the bottom of the 'V' screen list, working up). You may be over-working your reactor, just not quite enough to adversely affect any components.

Yes, components will be disabled from the bottom, since energy from the reactor is distributed top-down and then the reactor just runs out of energy at one point.
The triangle beside the weapon means exactly that. The weapon doesn't have enough power to run at full efficiency.
If it says for example "General Efficiency: 0.5" that means, that it only has 50% power available, and only does 50% of the damage (it might also take twice as much Capacitor Energy)
If you would have a missile or Chaff launcher installed (which come after the weapon) you would see that those are completely disabled and not working, since the Reactor power already ran out at the weapon and the stuff below it doesn't get anything.
Few solutions to solve this:
a) get a bigger reactor
b) replace some components to use up less energy (perhaps RE them)
c) easiest: Get a freelancer (unless you are one yourself) to program you the "Reactor Overload 3" program on a droid chip, and get a Flight Computer from a Droid Engineer, and load the program up there. If you run it in space it will boost your Reactor Output by 60%. Just remember to repair every time you try to land again, otherwise your reactor will take permanent damage.
Also consider getting the Capacitor Overload 3 and Cap to Shield Shunt 3 or 4 from the Freelancer, and Engine and Weapon Overload 3 from a Imperial Pilot.
