Noob Question here, how do I like the guns on a Starfighter to fire with one mouse-button click?

First off, you need to make sure you have weapon group 1 assigned to your mouse button. You do this by going to options/keymap/space. Assign your mouse to that group. it's also useful to assign group 2 to your prefered button whilst you're at it. Then you need to launch, press G, this brinmgs up the weapon groups. select group 1 and select all weapons you want to this group. Note, make sure you have a Cap that can handle firing all weapons at the same time, otherwise, you'll bleed yourself dry. You can also assign missiles to group 2, this lets you use 2 buttons to fire all weapons with ease. I have all 4 weapons firing on my B-Wing, and i fire my missiles at the same time, when i let them go. I use a joystick, so it allows me to assign counters etc, to the other buttons I have available.
