if its any consolation, im freelancer. only a fledging pilot. 1100. could anyone give me a list of things to grind to get to each lvl skill?

Going out on a limb here: Duty missions.

Or get a higher level friend to allow you to be a gunner or by having them disable big targets and you get a shot or two in on disabled hulks.

Actually, pilot/gunner split xp evenly, no matter who gets the kill. I have been flying with a gunner a lor the past few days, and even if my gunner doesn't shoot anything, he gets xp for my kills.

The second option was for two pilots in two ships, in that case each pilot gets full xps, not split.

As Caliet said, take a Duty mission from your trainer, or from the Tatoo space station. They are pretty well geared for your level, and will gove you good practice time that will help you farther along. Having a friend help while you're mastering the basics isn't as good as it seems at first.
