Well the type of ship and engine does have an effect on the fight.

for ex. a heavy X with a slow top speed but good y/p/r will kill any interceptor style ship (A-wing/TIE int/TIE adv etc)in a turn duel simply because you can throttle down to under 50% and still turn on a dime whereas the interceptor is only manoverable at high speeds 60%+ and so his turning circle is much bigger. However you can just change strategy if youre the interceptor pilot and joust them, knowing youre engine is faster in a straight line.
