Yeah, there is one Imp gunboat that I have found in Kessel that acts like that. And both factions' gunboats do that if you blow the Vette but leave the boats. But other than those few exceptions, gunboats in Kessel follow their path without fail.

Again, against an agressive, manuevering gunboat go for the engines, not the turrets - you can stop them dead in their tracks. Heck, even against the ones that fly straight I go for the engines.
Several Imperial gunboats in Kessel (or the same one, maybe I continually get lost) won't chase you, but they do roll and spin a bit when you start shooting at them.

All the advice here on Rebel (not Imp) gun boats is correct, but one thing has been omitted. If they are alone, or not fighting Imp NPC's, by and large they fly straight and level. (If they do, as they do on rare occasions, start to maneuver without NPC presence, as stated above, be ready for it, break the other direction and "down" in order to stay in the underneath blindspot.)
But, if they are fighting Imp NPC's, they are much, much more likely to start into spin maneuvers that may line up more than one of their gun turretson you and get you in trouble. Technique and situational awareness though, can make these a very easy kill. Find the ones alone, stay below and behind and hammer away. Match speed is your friend.
