Earlier I asked about the what other profession that will give me maximum defensive mod for my master pikeman +0240 doctor template. Now I have to change my doctor to 0440, and between the choice of TK and fencer, I did some mathematics:
Since I can only master 4300 for the remaining profession, then I MAY not take the max defense benefit from fencer.
If I go for fencer 4030, I will have: melee defense (69); range defense (69); dodge (60); blind/dizzy/intimate (10);
If I go for TK 0304, I will have: melee defense (65); range defense (45); acuity (71); blind (10); dizzy (5); stun (15); kd (20); posture (30).
So, I would like to know if I should choose fencer for dodge or TK for acuity. Please advice.

Unless you plan on doing some fighting as a fencer or tka, neither dodge nor acuity will do a thing. Dodge only works with a 1-handed weapon equipped, and acuity only works unarmed.
Personally, given those two options I'd probably go with the TKA just for the kd and posture down defenses.

I would probably do Master Pike/ 0440 doc/ 3400 fencer. This gives you 84 melee defense, 79 ranged defense and 70 defense vs kd.

i would go doc 3/2/4/0, your buffs would be little worse but you would be able to cure/buff poisons and cure fire. this will be essential for PVP. ill edit in what else you can pick up in a sec.

master defence tree in either TKA or Fencer.
this is a nice combo i think
