Ok, i'll answer your questions in order as best i can, no real expert on all things pikeman but i'll give it a shot 
Medic skills would be really useful. If your gonna solo a krayt as pikeman its gonna take a real long time. i mean a REAL long time. Krayts have high resists and heavy armor, only vunerability being cold if i remember right.. Eventually a krayt will wear anyone down, so it's useful to have healing in case you get a doublespawn or something else disastrous happen (my favourite was a stormtrooper patrol turning me overt while killinga krayt 
75% ubese should cut it with medic but i'd say 80-90%comp would be better if you can get it. You'd probably destroy ubese in a long fight like that.
normal lva/vl is fine, i've killed a krayt using standard sliced weapons no problem.
I've always found mind regen as the big problem, although with 2-3 shots of brandy thats np, if your going against ancient krayts though some knockdown preventing food could be a real help.
Intimidate all the time
50% damage reduction really helps when the big damage flies around. warcry is useful when you need a short break to regen.
hope that helps a bit. sure everyone will disagree with me but i've had no problem with krayts and the above.

K thanks for the tips. Didnt know they where THAT hard,because you hear ppl all the time "Nah I killed 3 krayts last nite,np"...Since Im a Ranger I dont want to be running around killing NS to get good loot all the time,Krayts seem more like Ranger style to me.

Do I need Medic skills?
Is my 75% Ubese enough?
Will a normal VL/LVA with a nice damage slice do it?
What food to use?
Anything else like Intimidate or other specials...?

kool thing is if you kill NS's then you have a chance of lotting an ok polearm more than if you were fighting a krayt. after that the you go fight a kryat of the polearm is good enough.
