If my knowledge of Sy Snoodles is correct, then I believe the song you're looking for is StarWars1, the very first song available to novice entertainers. The problem is that when played on the first instrument available for entertainers, it's not very recognizable as the song.
If you play around with the different flourishes, it'll suddenly snap - it happened only a month ago to me that I went "Aha! *That's* what starwars1 comes from!"

Actually, I believe StarWars1 is actually part of the Mos Eisley Cantina music from ANH (Episode 4), which is performed by the Bith band Figrin D'an and the Modal Nodes. (The NPC band plays a different piece, also featured later in the cantina scene, in game.)
Sy Snootles is the singer from Max Rebo's band. The Jabba's Palace musical number (Ep 6) was completely redone for the Special Edition release, but you can still sometimes hear the original piece if you go inside the Throne Room.
Also, for anyone who wonders where the tinkly music in some of the NPC guild halls comes from, this is also from Jabba's Palace.
