Think of it as battle stress. You just took a grazing shot to the head, you're bleeding, 3 of your buddies are dead, and a new creature just joined the battle. Yes this would make for some high stress (wounds/Battle Fatigue)
To relieve the stress you need to relax, do something to entertain the mind so it isn't concentrating on the massive battle and everything that happened. So you go to a cantina, hotel, or anywhere else that a skilled entertainer can help you relieve that stress. This type of healing just isn't possible in the middle of an all-out battle. How are you going to relax and try to de-stress yourself when there are blaster bolts zinging 6 inches above your head and things shooting, and bleeding and dying all around you?
This personally is how *I* see the reasoning that mind wounds cannot be insta-healed and I think the devs had a similar view on it.

I'm not so sure that mind damage should be instantly heal-able. I guess I'm not so sure about the impact to the wider game. I do think it's odd that Health and Action are while Mind isn't -- but y'know, mebbe there's some really good reason for this (perhaps Jedi actions take Mind points to do and they don't want Jedi characters to be using stim-packs to keep ungodly powers going 24/7?).
