They give music XP. However, don't bother grinding on them they dont give you enoughXP to waste all of those resources considering how much XP we need. You can easily make more XP standing around in a cantina playing music unless you are a really effective artisan grinder and even then i'd have my doubts.I'm not sure if they fixed it, i havent made any instruments in a while,but it used to be that creating the instrument gave music XP but the UXP for giving/selling it to another player gave GCXP.
Just be sure you're always playing either your best song or your best instrument and when you flourish you get 2 flourishes in each XP tick that you use flourishes in and you'll dofine as far as the XP goes.

Thanks for all your help. Since posting I picked up artisan and am now supplying my own wood 
I decited to take tailoring for good measure.
