The logic may be a bit hard to follow, but this is why I'd like to just get merchant out of the way before mastering any other profs.
Before I state that though, I have a secondary reason that I'm sure most people can relate to. Skill points. Mine are all tied up, and I find it really hard to get rid of some skills that took me hours to get.
Now, this only applies to holo grinders of course, but merchant was my third holo. Let me ask you an obvious question: which professions will you master after your holo goes silent? The easiest ones! At least that is the smart thing. Now, this will vary somewhat from player to player, but some players are better adapted at certain professions. Like some people can grind combat all day, others can craft all day without breaking a sweat.
Here's the thing, you are doing merchant, and you realize you could prob do 3 other proffesions, easy ones (especially the ones that don't take too many skill points). You do this only because one of them could be one of the five professions you need. Sounds like a good idea.
Ok, if you get merchant for your first or second PROFESSION or fourth or last HOLO, then yes, this is a good strategy. But with me, I've done only holo proffs besides medic which I needed to get CM my first holo, and I'm on my third. My fourth holo will tell me (unless medic was one) the final prof I will actually know I need.
Let that sink in for just a little bit. Either I will, or I will not hit one of my fscs profs. There's no in between. In the case that I do not hit a fscs prof, I've at least gotten those profs out of the way. I now know not to try them, I've saved myself some time. Not a huge amount, especially since once the holos go silent, I would have tried those same profs anyways.
Now, let's consider the fact that on one's third holo prof, if they haven't done any other professions, they have 2 mystery professions left. Now, scenario 2, one of those three (just saying three, because in three weeks you could prob get 3 easy profs done). Under that scenario, there's a 50/50 chance your next holo will tell you the easy prof you were going to do anyways, and a 50/50 that it will tell you a prof you would have not tried for a very long time. Months possibly. With the system changing in an unknown period of time, the risk is far to great to do the easy profs first, getting silent holo early, and then not having a clue as to what profession you should try mastering.
So mastering things 'in the meantime' is one way to screw yourself, unless you decide to do bounty hunter, commando, or squad leader while doing merchant. I doubt anyone has the skill points or fortitude for that. I don't.

Another way to look at it is, you never know what your fifth profession is gonna be, so you might as well start mastering them now, and make yourself a little seed money for whatever your next profession is gonna be.

Grind out one crafting skill to pair with merchant. Merchant goes alot quicker if you have something to sell that people want. I have BE paired and its going at a decent pace. I know if i had like weaponsmith or armorsmith paired it would go ALOT faster, seeing CH got the crap nerfed outta it. But BE was my 2nd holo so i was lucky. Grinding this skill has become one of the longest unless you have an army of friends and 10 naboo houses out. I kinda wish i woulda gotten it as my first holo so i woulda been able to master it in like 1 hour before the awfull patch. Oh well on to the spam advertizing. *sigh*

Terikan is right.. i did the same. I would try to explain it in another way:
Lets assume every char get some easier professions (basic, novice),and some hard ones to grind in his way to FS.
First holo says whatever... while you master it, u get time to master all the easy ones so you do it.
Unless you unlock it now, very unlikely, you have only hard profs for the silent one.
In the other case, you leave the easy ones for the last, and just grind what the holo says. So you get a chance to complete all the hard ones in your 5 list just following the holo, and the easy are here yet.
This doesnt mean you will open the FS with an easy prof if your 4 holos said very hard profs...
Neither mean the holo will tell you always your harder prof in your list...
But is worth a try, since grinding the easy ones is so fast that you can do in no time.
Sigh, my english skill is insufficient for logic. I did my best.

Terikan, let me shoot down you entire argumentation... The sooner you get a silent holo the sooner you can start to search for the final profession.
Let say you master 3 fast professions while you master merchant. Then there could be 2 results.
1) One or more of thoughts professions was one you needed to master. Either you would have gotten it as one of you next holos, or you would have had to search for it.
2) None of them was one of your holo professions. In that case, you have three less professions to try, when you hit the silent holo.
No mater how you look at it doing a few professions at the same times merchant will save you time.
My suggestions for good side line professions are:
Architech: make small houses instead of gungan head statues. Gives you something to sell.
Tailor: Lots of different products... and you need to hand make everyone to get the xp anyway so why not use that to build a huge selection.
Armoursmith: Always a good way to make credits.
