How can this be done? Is there a "Ban All" syntax I can use to only allow my guild access?

As it stands right now, you cannot place a vendor inside a private structure, nor can you make a structure with vendors inside private after they're placed.
You can ban guilds, and individuals, but there isn't a blanket ban command. Best you can do is place the entry fee at 50k(the max as I remember)and put all your guildies on the entry list.

Just keep in mind that if someone pays the 50k admission fee, they will be able to enter and buy out your vendor.
This is not a problem if you're selling things worth less than 50k, but if you're putting up million cr items for considerably less, you might have problems.
