Is it worth learning? And what exactly can it do?

Thanks in advance

The Hiring line is completely about marketing. If you don't care about that stuff then you don't want it. (Unless you are dying for a silent pink protocol droid at master)

Hiring I's big deal is that you can pick which NPC race you want instead of just getting a random one.

Hiring II Gives you more races to pick from (and more droids and terminals)

Hiring III ditto

Hiring IV Gives you more of that and allows you to give clothing to your vendors to customize what they wear.

None of that is ESSENTIAL to selling stuff but it is a marketing thing that allows many people to customize their shops and make choices to present the image they want to present.

you can get the same benefit by merely creating a vendor and destroying them till you get the race/style you like. Sure, you might go through 12 vendors, but its just a few minutes till you get the species you want

Keep creating till you get a decent body weight and clothes that actually match.

This skill only saves you a bit of time in creation of your vendor.... but after the vendors are there, there is no point to it.

12? I often go though 5 or 6 to get the right look when I get to choose the race.. if I was trying to get the race AND the right look it could go on for days.

I have progressed up to Master as the merchant experience accumulated, but will probably back out as I get fed up with heavy duty crafting. Now I understand all the stuff about keeping extra vendors, which does not bother me too much cos I only use one; I can thus go back to Bus3 with no issues. What happens if the vendor I keep is a custom selected NPC? Will it force him back to a Terminal? Will it delete him? Anyone know?

Currently it doesn't do anything. The vendor continues to work as usual. I'm not sure how it will work in the future but it is very unlikely that any change will result in any immediately loss of the vendor or items.
