It's simple:
Go to Options>Controls>Keymap.
Select the Chat tab at the top, then scroll down in that window until you see "Chat Edit Copy" and not far below it is "Chat Edit Paste". Select them, and rebind keys to them. I personally use Ctrl+Alt+C for Copy and Ctrl+Alt+P for Paste.
Alt/tab out of the game.
Open up Window Notepad.
In Notepad, type out how you want your sign. This is where you would put in color codes. If you want line breaks in your sign, you just type it that way in NP.
For example, if you type, in Notepad:
\#0099ff Robar FireArms
\#33cc33 Robar Swoops
Then highlight/Copy that by right clicking on mouse as normal.
Go back into game.
Use terminal to change your house name, and just use whatever you keymapped "paste" to be to stick it in there. Just keep in mind, because of the line breaks, you won't be able to easily edit it from the set name window. Just go back and change it on Notepad again and repaste the change.
So, your shop sign would then look like this:
Robar FireArms
Robar Swoops
Hope I explained that well enough.
If you need a decent list of html color codes, I like this one: http://www.immigration-usa.com/html_colors.html
You just have to put a "/#" before the 6 digit color code.

I've never found a way to put breaks in the lines of shop signs. So, we use a method to add some spaces.
Try inputting
~Robar FireArms~
::::Robar Swoops::::
or a variation thereof till you get your line breaks to work as you would like them.
