Was wondering if people on admin to your house/store could add/remove items from your vendor?

No.
Only the merchant can manipulate the vendor.


Everyone else has to use the buy / offer functions.

Right. Only the vendor owner can access that part of the vendor. Everyone else can buy from it, and offer stuff to it. That's it.
