Can i switch them out to NPCs? Or do I need to take everything off, then destroy and replace?

you will have to take the items out of your vendor, but I suggest that you make your new vendor first (since you have an extra vendor from novice merchant), then pull the items out of your old stockroom and restock them into the new vendor.

you NEED to take the items off the old vendor, else you lose them when you delete the vendor

When I reach higher levels, will I be able to ad bark etc these current vendors? Or do i have to do this same process everytime i wanna upgrade my vendor?

you only have to do this when you want a different looking vendor. things like planetary ad and ad bark doesn't require new vendors.

hell, you don't need to make new vendors now if you don't mind not having NPC vendors. terminals and droid vendors work exactly the same as higher level NPC ones.
