can anyone confirm what will happen to items that are over the vendor limit?

Nothing.

They will continue to be listed for sale until their listing time expires and they are moved into the stockroom.

You will not be able to add any new items for sale until you are under the limit for your particular skill level.

Items in the stockroom do not count toward this limit but will poof after 7 days like always.

If your vendor remains empty for 2 weeks, it will be deleted.
