Nope, you will either need to bring a healer with you or hold onto novice medic.

I am going to have to give up all of my Medic skills, including Novice, to be able to advance in other areas. But afer I do, will I still be able to use any Stim Packs I make before I give up the skills?
Thanks!

No, you must keep at least Novice Medic in order to use stimpacks. This is because you are required to have the /healdamage skill in order to use stimpacks.
With Novice Medic, you get Med Use = 5. So you won't be able to use anything better than (B) Stimpacks and (B) Woundkits.

Correction: With ONLY Novice Medic, you will only have Med Use = 5, so you won't be able to use anything better than (B) Stimpacks and (B) Woundkits.

So are there no healing options open to the solo player who has no Medic skills?
