What's the point of those first two things that you get to craft as a starting medic (aside from the stimpack). I don't know what they're used for and I haven't been able to "USE" them.

Not sure which you mean, but likely they are components for higher level meds. They are given at a lower level so, in theory, you could supply a higher level biochemist with components they use to make advanced medicines.
