This has probably already been discussed to death:

Space is big, the sectors we have are not, here are some ideas for instanced space to feel of how big someplace is.

1) Missions in to deep space (Not Deepspace). Like the corvette a series of missions ends up taking you to a station where you jump to an instanciated sector to finish the mission.

2) Imperial Interdictor Class cruisers. I think that was the name, anyway, during a hyperspace jump an overt pilot can get pulled into a small instanced sector filled with enemy fighters of the appropriate difficulty.
