As tier 3 imp pilot I can decide between the interceptor with 50k mass and the bomber with 190k mass. What is the difference beteween them? the bomber should be slower and take more damage, and the interceptor should be a fast dogfight figther, as far as I know. But with the engines, shilds, weapons which have their own stats, how does the chassis itself effect the ship?

A small disclaimer: I didn't play as an imperial at the latest stage of the beta, so I haven't actually had a chance to fly the interceptor and bomber at the current mass settings.
I would imagine that the bomber handles somewhat like the Y-wing or B-wing,meaning: It turns like if you had dipped it in glue. Don't expect the bomber to be a fast, highly maneuverable ship, you will most likely not use it for pure dogfighting. In effect, the chassis pretty much affects the engines you have mounted to it, limiting its abilities. Also, there is the issue with the hitpoints, which I guess is basically the damage you can take bfore blowing upwhen shields and armor are gone.

Engine stats auto conform to the ship chassis you are using. The top 3 stats that is. The bulkier ships: ywing, bomber, etc. have low caps on these stats and it severely effects thier handling. If you do choose to usea heavier ship i recommend slowing down to at least half speed while in combat. Lighter ships can engage in combat effectively at faster speeds thus they are able to evade shots better. Heavier ships must engage in combat at slower speeds and get hit a lot more.
