Depends on what you like flying.
Are you used to flying bombers? Can you handle yourself in a dogfight against multiple AI with one? Go for the bomber.
Can't handle bomber flight handling? Go for T/I.
T/I is a fine ship, i love it. Problem is once you hit teir 4, without some SERIOUS RE work, it just doesn't cut it anymore and becomes obsolete. T/B you can theoritically always use because of the mass.

The Interceptor is the better fighter, the bomber is the better bomber.

I learned that the TIE/B can be used to devastating effect for PvE grinding. Get a solid reactor, and the fastest, highest YPR-rated engine you can find, then run engine overload at your highest level. It's still a little sluggish, and has a greater learning curve than the TIE/I, but it IS manageable against even tier 5 ships, and the amout of firepower you can lay down at mere tier-3 level is unsurpassed.
The fundamental difference, as you'll have to learn, is in throttle management. The TIE/I has a relatively high ideal turning threshold, and it's a very tiny range of the throttle. In a bomber, the ideal spot is far lower, and you have a much greater range of speeds that will give you good turns. The trick is to time them just right with your turns, becaus the ship still takes time to respond when you turn, and a certain amount of time that it continues drifting after you ease off on the stick. Likewise, the throttle response can be slow. With foresight, these will prove to be no hinderance. You'll have a much easier time taking out bombers in a TIE/B because of the low speed/high turn combination, and smaller, faster ships...well...put some good guns on, and in a couple of hits, they won't matter anymore :-).
Okay, kinda lengthy, but that about sums up my experience. I initially started with the TIE/I. I wish I'd started with the TIE/B instead. Hope this helps.
