1.) Any starship can be used to mine, and each has its advantages and weaknesses. Generally higher tier ships are better since they have more weapons slots. X-Wings are gold, so are Jedi Starfighters.
2.) You need at the mimimum a cargo hold to hold in your contents (no pun intended) and a mining laser. If you acquire these 2 and a tractor beam, it makes things a lot easier.
3.) Yes. Speak to flash harrison in the Great Kashyyyk Tree. You can do his quest to get some 2nd rate stuff, up until the last mission to get the Y-8, that is bugged.
If you don't want to mess with quests and missions and you just want to get up into space and try it out............
Do a bizaar search for a mining laser and a cargo hold. I found both in about 10 min.
Get your basic ship, the higher level the better, and equip the mining laser and the cargo hold. Even if you have a lower level ship with one weapon slot you can swap out your mining laser for the regular weapon....in a pinch the mining laser will destroy enemy ships as well...although it takes time as they are not that powerful.
Equip a cargo hold. The large one holds like 1500 units I think...which may not sound like much but trust me, that will take you awhile to collect.
Launch into space. I suggest somewhere easy to start, like Naboo space above Theed. Two nice asteroids right there to mine and if the Asteriod Bandits jump you, which they will, they are lowly level 1's in that space area......so even in the most basic of ships you should be fine.
Go up to an asteroid. Target it. I suggest stand out about 500m or more. Fire slowly at the roid. After just a few shots you should see a chunk fly off the larger asteroid. Target it and follow it as it will be moving.....shoot it a few times until it explodes leaving you anywhere from 3 to 6 or 7 smaller pieces of space rock. Target them one ata time, maintaining fairly close proximity, and after 3 or 4 shots (normally) it will explode and you will see your Cargo Hold flash up with how much material you gathered. To start it will say like 1%...., 2%, etc.. it's fairly slow going, not like mining on land.
Hope that quick explanation helps you out. I only just started this myself....mainly to make myself a couple of BARC repair kits to have around in case my BARC goes boom! Fairly easy to do.....I accumulated enough space materials to make 2 repair kits in about 2 hours of flying...which for the veteran miners here might seem like a lot but I had to learn as I went.
One side note....if you have a higher level ship you can equip with good shields, say at least 2500 pointers, then you can just let the mining bandits nail you and not worry about them. If they get too thick they do mess up your mining, so occasionally it's good to thin them out.
If your looking to make money space mining two quick hitters for cash would be the two minerals needed for BARC repair kits. Carbonaceous Asteroid (found in Naboo space) and Petrochemical Asteroid (found in Yavin space if I recall.....).
