In every ship each weapon that you install shows as 2 barrels on the ship.MP master ships have 2 turrets that have 4 barrels on each turret. So if 2 barrels equal 1 gun on each other ship, shouldn't 4 barrels equal 2 guns on the MP ships?
Also on several occasions I remember the Falcon firing a forward mounted blaster at tie fighters.
I would just like to have a little more fun in my MP ship then going to dantoine and killing black suns

Tie Interceptor has 1 weapon but 4 barrels, so that kind of kills your formula. But with the MP ships being the way they are (killable in nearly one hit) I could see this as a balancing possibilty.

Maybe interceptors should get 1 more gun and a few k more mass around... 7k? Would be interesting to see a few more people actually flying them (they are what tier 2?)

I think they should just double the power/stats of the gun you put there. Yes it should be 4 guns but I think it'd be easier to just double all the values for the 2 weapons spots.

Common misconception about the Falcon, there. It has no forward guns. The only possible exception would be that auto-gun Han has sneaked away in the under hull. But that's mostly anti-personnel.
In Return of the Jedi, you see the Falcon firing forward. The people firing were in the turrets, though. Their targets just happened to be in front of the ship. You never get to see those people, but Lando had a gunnery crew going into the battle of Yavin.

Anote on the falcon having forward guns, Jedi-of-the-hills is correct. Also if you read the books you find that when Han doesnt have gunners he can lock the quad-turrets so they face forward and remote fire them from the cockpit. (I know this opens up a whole new ball of wax).
