I was told by a friend that when you drop pilot after achieveing Ace that you will get double experience on your next pilot profession. Is this true? I really need to know otherwise I might be in for the long haul again.

Only for the missions.

I dont believe you get Double XP for just blowing up ships.

Yes, you could double EXP per kill. If you destroy a ship worth 100 EXP, you'll get that plus another 100 of an "Ace Pilot Bonus". Any ship, not just mission ships.

I believe the cap, though, is three times normal EXP.

OK I dropped pilot and see that i get a Master pilot bonus equal to the xp per kill. My second question is, I am an Arkon's Havoc pilot now, already aced Vortex and plan to do Crimson Pheonix, when i do Pheonix will my bonus be the double or will it triple? Also if it doestriple, doesthat mean I will have this bonus carry over to privateer if I plan to do them? I would love to have a x6 bonus but don't expect this to be possible.

Not too far into the link given by Monsofo, it says this:

You will get the standard "previous master bonus" of [XP * (1+the number of previous FACTIONAL masters)]if you previously had mastered a pilot squad in any of the factions. My understanding is you get 1+ for doing a single squad in any different faction. For a total of 3x+1 bonus (Rebel, Imperial, Privateer). You do not get a bonus for each squad but rather for completing any of the 3 squads in 1 faction. If you complete multiple squads in one faction you do not get a bonus.

which, I believe, answers that question.
