I would like to see others in their cockpits and be able to see wave emotes and other gestures. Also peering into party barges would be a hoot too. It seem like they cant remember how to make things transparent like the goggles and chitin helmets like they used to. Solid textures are a cheap way out of programming in my opinion.

Well first they'd have to fix the whole sitting position we pilots have. Right now I see everyone piloting their ship (in MP ships) looking like they're sitting on a dewback. I can sometimes target myself when I'm piloting my single player ships and I'll see a little picture of me looking as if I am straddled across my Dew's saddle.
After they fix that, they'd have to address the fact that your client not only has to load the ships, stations, nebulae, asteroids, planets, etc. but also has to load customized characters wearing any number of armor/clothing combinations. Couple that with the furniture inside the sorosuubs (if there's one in the area) and you've got some hefty lag to play with. (none of that "My computer is good enough to handle the lag" stuff either, I'm sure the general response you'll from your fellow players will be negative.)

I dunno but when you are on the party parge the interior looks very large, and from outside the ship looks TINY! So maybe in reality the inside and the outside are different sizes? That would be a definate issue with making see through windows.

Gotta realize the scale you're looking at. I haven't moved my sorosuub next to a tie fighter yet (no one will sit still long enough for me to get a good size comparison) but next to my friend's Kimogila, it looks about right. The observation deck windows are about 10' high or more I think. Take that into account when imagining the inside of your ship from an outside view.
