When i put a 92 speed engine in a x-wing its not as fast as it would be in an a-wing which is fine but the only engines that you can realistically put on an a-wing (only used rebel ships so don't know much about others) are lvl 1-7 engines which aren't as fast as lvl 8-10 ones. because the devs went for the simple higher lvl=higher mass and better you can only put good engines on things like b-wings and novas where speed doesn't matter much. this isn't a good thing since a-wings (and whatever the freelance and imp equivalent is) are known for speed more then a b-wing is.
What the devs need to do is change it so when you put a engine in a light mass ship the speed goes up because otherwise light mass ships wont have the speed advantage they need.

i say we should just get the best we can as i kill i keep getting better and better parts, which makes me happy

Can anyone explain the performance numbers? Pitch/Yaw/Roll rates.. is higher number better or lower? What do the numbers mean?

The higher the rates, the faster it is. As soon as I find out specific information on the other part of your question, I'll post it. I have my ideas, but I want to be sure.
