I wanted to switch from a Privateer to an Imperial pilot. The guy in Theed told me he won't talk to me. Trying to surrender the skill tells me to go talk to the guy on Tatooine. The guy on Tatooine just throws missions at me (even after I delete them!). How do I give up being a freelancer?

Its not the pilot trainer who you need to talk to. Goto Bestine, inside the hotel to your left as you go in by the bar. Talk to that person and there is option to quit privateer.

Unless they changed it last minute in beta, you cant just let go of the profession via skill window. You must talk to NPC.

Yep. Go to Bestine and talk to Gil Burton, the mon cal.
