There were a WHOLE BUNCH of them in "A New Hope."
lol...sorry. Try the Kessel system. That's were Ive heard they hang out at.

Last time I checked the star destroyed was in the deep space sector

Yep, the Star Destroyer (The actual one and ONLY Star Destroyer) in JTL is in Deep Space. This is supposed to be a Master only area, but currently everyone can enter it on the beta server. Kessel contains nothing but gunboats, TIEs and rebel fighters. Oh, and from time to time a few corvettes.
This means that you won't see many Star Destroyers at all, and you'll probably never see one unless you master the profession.

Step 1: Become a Master pilot of any profession.
Step 2: Get some prestige points (by killing NPC ships).
Step 3: Spend prestige point at the appropriate space station to enter Deep Space.
Currently on Beta, there is only one step: Find the appropriate space staion to ener Deep Space. (The prestige cost is currently set at 0)

is there a way to check your points? I have killed ton and tons of NPC ships so I should have a fair amount stacked up.

It's listed where the normal XP is. However, you need to be a master pilot to get them.
