Will we be able to use a joystick with JTL, or will we be stuck with the plane old mouse and keyboard?

umm no you have to actually type all the commands in by hand in order to fly.
Not really. Joysticks, game pads...probably even those nascar wheel things are supported. You can use Key/mouse...but I wouldn't advise it.
