Would someone be so kind as to put up a list of where to go for all the quests? I really have no idea where to go for the Jedi Fighter, for instance.

Search through the forums a little bit. Specifically the Pilot forums. There's a ton and a half of information there, answering probably every question you'll have concerning the ships.
