Instead of a joystick, could I use a flight yoke?

Yes, because the computer still sees it as an imput device regardless of its shape on your desk. Feel free.

I have the Saitek USB X45 joystick with separate throttle unit, works well and needs no setup, and all the lights in it add to the Star Wars feel.

i got a gamepad for my computer last night, im gonna test it, otherwise i got my Logitech Wingman attack extreme

If you can't roll with it, and it doesn't have a minimum of four buttons don't use it.
