Is there a way of examining the contents of your cargo hold whilst in space? I mean you can work out from the capacity percentage how much you have collected, but you can't examine the stats of the resource.

Nope not that I have heard of yet, just on the ground in data pad useing the radial menue.

....does anyone know whether this is a feature of the Y-8? I haven't got master pilot yet.

I would assume (bad thing these days with SOE) that with the Mining Ship, you can just leave the controls, open your datapad and look. Kinda STUPID that they don't at least let us look at our hold from the Ship Status screen or something.
Dev1 : "Gee you think we should let them see their cargo hold so the can see what they have pulled in from space?"
Dev2 : "Naw, keep them guessing, it will keep them too busy to complain about CU!"

Hmm, from what I've seen so far all asteroid resources have static values for OQ. Some are 1000, others are 500 and this hasn't changed since launch. If this does get changed then yep, it becomes even more necessary for players to have full ability to view quantity and quality of minerals whilst in space.
The info you get from View Cargo or by using /comm on the system's Mining/RSF/Trade Fed outpost just doesn't cut it.
