why make up other tie fighters when there was one that when unused that is generally excepted as one of the standard tie's?

The Defender was in prototype phase at the absolute tail end of the original Star Wars saga. While having large numbers of a-wings and b-wings might seem like they are "fudging it" for the rebels, both those ships existed as at least limited production prototypes during this time frame.

Every fighter in JTL falls into the "Original Trilogy" timeframe. As in, by the end of the trilogy at the latest, they'd exist. The TIE Defender didn't start coming out until a few years after Endor. It was like a TIE Advanced Advanced...all of the Hyperdrive, Missiles, Shields and so forth of the Advanced, but considerably more modern. The TIE Defender belongs in the same age as the Scimitar Assault Bomber...they're Thrawn-era ships. They don't belong this early on in the timeline.
