Is there any point to ejecting when you take too much damage? Seems like there isn't. Your ship is still destroyed and you still die. Is there a decay factor that I'm missing here?

It's more for when you're dead in the water (space?) and no one finishes you off

I am pretty sure its so you can choose to die quickly than be entirely disabled and have npcs get tied up with other npcs etc, leaving you dead in the water.

Ya, thought so. They should do it the way it was done in the X-wing and TIE Fighter games, make it so after you eject, there's a chance you can get rescued by a friendly shuttle, or captured/killed by the enemy.
