The "Cargo Hold" that relates to docking cannot be accessed. It is solely there for the purpose of quests. And I've never really tried to dock with a non-mission ship, so not sure what the point of that would be.

The Cargo button that you refer to, I'm guessing, is the one on the right at the bottom of all your other components.

That button is for the real cargo hold you can put into your ship and is only used for space mining. As of now, that is the only thing you can actually collect into a cargo hold in space.

I was confused by this as well, because there's at least one space load-in screen that talks about pirating freighter ships. It specifically says that you can now attack, disable and dock with freighters and loot their cargo.

As the others here have pointed out, it doesn't work...it will tell you that you have transferred such-and-such to your cargo hold but there's no way to access it. My guess is it is something they planned to include but didn't for whatever reason, however they failed to remove the screen that mentions it.

Yes I know, but that's only for asteroid resources that you've mined. It doesn't work for stuff you've supposedly looted from freighters. I've tried. Sadly this seems to be yet another case where the devs had a good idea and then nerfed it before they even officially put it into the game, then they didn't bother to go back and clean up the loose ends.

Either that or it's something they still plan to include but have started plugging it in advance.
