Open your data pad (Ctrl d) on the ground, right click on your ship....'set name' I think is what it is called.

My SoroSuub yacht is the Drunk Punk, after a ship of the same name in a comedy fanfiction I helped write a few years ago.
My TIEs have the name Starstorm, plus a number in roman numerals to signify that it is a different ship. I currently have an Interceptor with the name Starstorm IV.
When I get a new non-TIE vessel I'll come up with a different name.

YT-1300 - Lonestar (used to be "Millenium Pigeon" but then i realized my other ship was spaceballs themed, and my YT had a star on it anyways)
M-22-T "Krayt" Gunship- SpaceBall One
I decided that spaceballs themed was the way to go.. cause i'd had SpaceBall One on my Rhix, and decided to carry on it's legacy through a killer-weapon-toting gunship.

Tie Bomber: Binoculars
I was only briefly in one for 1 mission but when on my main toon I was helping a a friend on a mission and he was flying one. I was "parked" behind him at one point and it looked like binoc's for the Krayt.
