That right there tells the whole difference between the Imperial ships, as little as there really is.
To break it down, Spdx is a multiplier on the Top Speed of your engine, so a 0.5 Spdx would mean your Top Speed on a 100 speed engine would only be 50. The other numbers are written a little odd, but simply put, Acc and Dec are 0 to ~100, mainly grading how fast your ship will accelerate or decelerate. Pitch/Yaw/Roll are 0 to ~600, again, best way is to compare it to the others.
So, if you take an Interceptor and compare it to a Bomber, you'll get:
Speed: Interceptor is 15% faster
Acc: Interceptor accelerates 4x as fast
Dec: Interceptor decelerates 6x as fast
Pitch: Interceptor is 6 times as quick pitching
Yaw: Interceptor is 6 times as quick yawing
Roll: Interceptor is 6 times as quick rolling
Guns: Bomber has 1 more gun and missle slot
So, in short, a bomber will pack a bigger punch, but will be, as Yun said, like flying a piano. And not one of those Baby Grands mind you, a full size Grand.
Though, now I got to thinking, wonder if the same holds true on booster top speeds. I use mine quite a bit, but never actually stopped to check the real numbers on it. Just always went with the "higher is better" mentallity instead of actually figuring out how fast it would go.
The TIE Bomber is a strike craft... a bomber. You need firepower and the mass to have the equipment to carry out the strike mission.
The TIE Interceptor is for starfighter combat, period. Whether it is to take on starfighters like a X-Wing or strike craft like the B-Wing.
The T/I excels in speed & maneuverability.
The T/B excels in firepower and protection. However, a savvy T/B pilot can make the craft quite dangerous in low-speed fights against other fighters.
Base speed is 1000 (that is 1000 meters traveled every 10 seconds)
Then you have the chassis modifier (speedx).
Then you have Engine Top Speed (ETS) which is a percentage.
And finaly Booster Top Speed (BTS) which is an addition to the percentage.
I beleive the formula is this BASE x speedx x (ETS + BTS)/100.
So say you have a chassis with speed modifer of .9, an engine with ETS of 115, and a BTS or 33.
Your final speed would be: 1000 X .9 x (115+33)/100
= 900 x 1.48
= 1332
Here's a thought: They added in an Estimated DPS formula somewhere for weapons with the CU. Can't they do that with JTL parts? Maybe an estimated DPS on weapons, plus an Estimated Top Speed/Pitch/Yaw/Roll for once you load a component into your ship? Would really help people that don't want to just use the "higher is better" mentallity.
The bomber is crap and has NO applications in this game,for me anyway....Although you can load it up with 'higher' mass parts....You'll be very hard pressed trying to dogfight.....A-wings especially....It's like trying to use a Mac truck in a road race with race cars
Misslies are crap,in general...You'll burn through them before you even know it...And you'll be lucky to destroy a NPC fighter with 3 missiles
Most of the really good pilots will take on the heavy ships first, not because they are typically easier to hit, but simply because they can pack a lot more firepower. I know that's how I am. I don't really fear that A-Wing flying super-tight circles around me. It's that B-Wing turning my direction that will get my first focus. What's the point of trying to out-turn an A-Wing and land that lucky shot when you are going to get 2 missles and 4 blaster shots in your back?
But, like you said, it all boils down to preference. And application. PvE, missles aren't worth using at all, unless it's a pair of spacebombs and you really need to drop a target fast. PvP, missles will flag you as a "priority" target, simply cause of their massive damage to player ships.

Then you have never taken the time to learn the different, wonderful quirks of the heavier ships like the TIE Bomber, B-Wing, etc.
They need to be improved, but IMO, they're still fun in a completely different style of flying.
There is more to space combat, in EVERY space based game out there, then going at the fastest speed with the niftiest turn radius.
There are times when being fast & agile is key.
There are also times when brute force and firepower is more important than prancing around like a pink-laced fairy who's trying not to get hit.
