it depends what is hitting you as to the damage reduction - vs a pvp rifleman youll see a much larger difference than vs a pvp jedi due to the damage ranges on your weapons
also if your mdef or had aura running the extra +100 def isnt actually very much at all so will have a small cumulative effect with your innate abilities but for a novice def (like me) veg can cut the damage i take by 20-30 points from a cl80 npc

For that matter with Aura on which is +500 defense. I see about 50 points mitigated, so your numbers close anyway.
You might try unequipping and requipping your weapon though. I heard the buff foods don't work unless you do this, but then they stay on until you unequip your weapon again. (bug).

here are some more #'s
FA on with no veg = 80
FA on with veg = 76
so its still give or take 5% ...what a pile of poop.
oh and i did unequip and re-equipped, it was the same dmg until i did that.
yes sucks its low i know. but still your oppent will miss more often.
dont forget that your def not only mitigates the damage done to you but also increases (if your def is higher) the chance for him to miss you.
thats why i eat it. not for the %5 damage reduction.
