MLS MEnh Healer 4040 : you'll get more force pool (6950, 7200 with robe equipped), and sap is helpful in PvP. You'll have less innate armor, but you'll be fine without it. Even with def 1000 (or 0100) you won't be able to tank as much as with def 4040.
About Healer 3000 def 0020, this might add force aura 1 but you'll lose the 1500 heal, and will be able to heal only at 1000 at once. It's up to you. Personnaly, was MLS MEnh Def 1000 Healer 4000 before, now MLS MEnh Healer 4040, and don't regret it.

Improved Force Armor adds 40 innate armor and the basicAura adds 250 defense to ranged and melee. So yes they stack.
