Actually it is the last crafting window where you shoose the hilt.

It is a drop down menu in the top left of the crafting window.

How do you craft the different types of saber hilts or types?

its been a while since ive crafted a saber but somewhere on i believe the first crafting window there is a little box that says XXXXX-handed saber click on that and then you can scroll down through the differant hilts
