Jedi is the plural of Jedi.
Anakin ep 2 = "Your gonna pay for all the Jedi you killed today Dooku"
However when talking about a Jedi's Lightsaber or something else that belongs to them (which should only be the lightsaber.. no possessions for jedi!) you add the 's

i'm personally more a fan of Siths like Darth Sidious who is the dark lord of the Siths. You know, my neighbour is a siths.
