Id also like to see a lightsaber deflect a blast from the Death Star.

About the weapon lightsaber:
"The lightsaber is the weapon of a Jedi, an elegant armament of a more civilized time. In comparison, blasters are crude, inaccurate and loud affairs. To carry a lightsaber is an example of incredible skill and confidence, dexterity and attunement to the Force.

Where do you get this from? They were powerful being, skilled in manipulating the Force...but they were far from Gods. The vast majority (I won't say all, 'cause I know the EU stuff too) of Jedi and Force Sensitive beings in the core systems were either killed outright, forced into hiding, or turned to the Emperors will. Not too many gods get shot in the back by a bunch of guys with blasters.
In the end, Jedi were never godly, they were simply humanoids with supernatural abilities. But very mortal, which in and of itself would go against the claims of Godlyness. I'm not saying they weren't powerful, but anybody who knows the Star Wars universe knows that being able to use the force had great power, but also supplied a great number of weaknesses. Being unable to fight against clones, since they weren't self-motivated, was a huge gap in the power of the Jedi to sense danger. Normal humans, like Jango Fett, were able to slay Jedi Masters through surprise and guile.
Gods are typically omnipotent, immortal,omnipresent beings...Jedi are far from that.
