Good question and here is your answer...
Specific CA's such as "Pistol Defense", only work if you are holding a pistol. It isnt "defense against pistols", think of it as "defense while holding a pistol". Same works for ranged defense, accuracy, speed. They only apply while holding a ranged weapon. This sheds a whole new light on how screwed upthe CU made this game. A jedi with Master Defender has 2 trees devoted to ranged defense that is completely worthless unless he is holding a ranged weapon, but if he is holding a ranged weapon then he can't use force powers such as force heal, etc. Food works the same way. Don't take melee defense food if you are using a ranged weapon or vice versa.
Forgot to answer your first question completely.
Use Control+C to pull up your character sheet. Near the bottom you will see your spped, accuracy, melee and ranged defenses. Select the checkbox to separate your skill bonus's from your CA/AA/BE clothing bonuses.
Alternately, you can use Control+S and search through your skills and see the extra bonus's there as well. It will show something like: Pistol Speed +25/+3. The +3 would be a CA for pistol speed.

Armor is better; however, why cant you use both? The only armor that give defense bonus's are helmet, chestplate and leggings. You can still wear BE clothes along with them such as an undershirt, gloves, boots, belt and bandolier and a PSG (if you are a ranged prof).

I'm not sure I totally agree with this... the way I understand it works is that Defense Bonuses determine whether you get hit or not. Once it has been determined you've been hit, then your armor bonus is applied against the damage done to you. I think I'd rather not be hit than be hit and take lesser damage. Of course it all depends on your Defense skill... adding +25 Defense to a 50 Def toon will still get you hit alot... adding it to a 150 Def toon might help you better...
Certainly you would want to use the two of them together as much as possible for the best possible outcome... harder to hit AND take less damage...

It was first discovered/discussed in the chef forums, and extensively tested by jedi. As far as I know, no comment by the devs on whether this is working as intended.
Your defense mods are only working based on the type of weapon YOU are using. Pre-CU, as most people would think, your defense mods were against the weapon that was attacking you. Post-CU, a melee fighter has no use for added ranged defense or ranged defense foods. Vice-versa for ranged.
This has to be a bug that needs to be addressed since many professions are wasting skill points on defense trees that don't apply to them. In addition, what it does is make riflemen and swordsman the strongest templates. Rifleman were supposed to be high damage profs (as they are) with susceptibility to melee attacks since they have low melee defenses. However, with the current system, riflemen have very high ranged defenses (little melee) and when holding a ranged weapon it is the ranged defense that is active. Thus they take the same amount of damage from a ranged or melee attacker, as opposed to more damage taken from amelee attacker. Same thing applies to swordsmen.

Yes, Luscio is indeed correct. Pre-CU Ranged Defense was actually your defense rating against ranged weapons. The same held true for Melee Defense. In the Post-CU world though, more and more "studies" are showing that Melee Defense is your blanket defense rating against all incoming attacks while YOU are holding a melee weapon. The same is true of Ranged Defense.
Rather obviously, this screwed up, but who knows when it will be fixed.
